Oppo Garage - Need your thoughts/help

This is no doubt from the cold.. and my Mazzy is shitbag asshole, if it were an animal it would be a cat.

Car: 2007 Mazda6S 6spd auto - 3.0MZI V6 (pretty much a Ford Duratec)

This is a problem on cold, COLD, starts. Ambient temp in the range of -18 to -24*C. On initial start RPM spikes to 5000-5500. I know cold, winter, starts will rev high, but this was almost flat out.

I let the car idle and warm, RPM gradually came down to ~1800 and coolant temp was at prime operating temp.
While driving I basically don't have to worry about using the throttle. It accelerates on it's own and maintains speed when going up hill. When I slow down and it puts itself in 2nd gear range, it jumps and lunges between 1st, 2nd, and 3rd and RPMs jump.
Because of it's 'self' acceleration (read: unintended accel.) I put it in neutral when wanting to slow and stop for traffic/red lights, when in neutral the RPMS are constantly jumping from 1400-1800 (will include video at end).
This happened twice today, once this morning when I went to get a coffee and then again on the way home. When I got back in my car and started up again after getting the coffee, everything was fine. Same with on the way home, I drove about 8km and really started to feel like I should pull over (especially when it was lunging between gears). Let sit turned off for a few minutes, started up and everything was right as rain and I drove home.

No CEL and no codes.

Yeah, I find myself siding with the car on this one. If I was in -24 degree weather, I wouldn't know whether to shit or go blind either.

Maybe try moving to Florida. See if that helps.

The Japanese cars in our rental fleet do not hold up as well in the cold compared to the Americans, Germans or even the Italians (the 500). But the Mazdas seem to do much better than the Toyotas: the Corolla/Matrix are the worst.

Well this Mazda6 is just a Ford Fusion underneath, which in my opinion doesn't help the situation.

Possible combination of these events (get a full shop manual that shows electronic/vacumm/emmissions diagrams to confirm): 1. On starting engine, temperature sensor indicates extreme low temperaure, in order to get catalytic to operating range high revs are required. 2. Once cat and air intake temps get to minimum normal range (while parked, no load condition) idle goes down to slightly below fast idle range. 3. While on the road denser than normal air (due to cold) and low temps (affecting vacumm for EGR/Emissions) both trigger the onboard computer to enrich the mixture and raise revs leading to the surging you experience (feels like un-intended acceleration surges).

The surges are only at low speeds when it jumps around from 1-2-3 gears. once in 3rd gear and above it would gradually accelerate on it's own, like up to 55km/hr (faster if let it).
I was looking at vacuum lines last night and the PVC valve was covered in oil/grit, so either a leak in the line at the hose/hose clamp or a new PVC valve is needed.

It is supposed to be above freezing on Saturday so I'll take a better look at it then.

I parked in my garage again last night and it started fine this morning. We'll see how it does sitting outside during work today.
